October is well under way, as are fall festivals, sports, school activities and a myriad of other commitments that go hand-in-hand with this time of year. Because my family, however, expects dinner every night, regardless of how busy the day’s been, I’ve been on the lookout for easy prepared meals that use only real ingredients and taste great.

When I discovered Michael Angelo’s™ Italian meals, found in the frozen aisle, I knew I had a winner. Michael Angelo’s™ is a family-owned company that uses only real ingredients, no preservatives and nothing artificial in their entrees. We tried out the Eggplant Parmesan, made with fresh eggplant, the right amount of Mom’s tomato sauce (made from vine-ripened tomatoes) topped with mozzarella, then sprinkled with a blend of imported cheeses – Parmigiano Reggiano & Pecorino Romano.

Using only clean ingredients you can taste and pronounce (I wasn’t sure if this was possible, but it’s true!), this was an easy meal our whole family loved. I decided to pair the Eggplant Parmesan with a simple green salad with Homemade Vinaigrette…

To make the Homemade Vinaigrette, I combined the ingredients in a mason jar and shook until an emulsion formed. The recipe makes enough for several meals, and keeps in the fridge for up to a week…
