Christmas Shortbread Bites {An Easy Holiday Cookie Recipe}

An easy and festive recipe for Christmas Shortbread Bites. Sprinkles are mixed in with the dough and sprinkled on top for an extra-festive feel!

Looking for an easy Christmas cookie recipe? These Shortbread Bites won’t disappoint.

I made these the other day using the same dough I made for my Glazed Snowflake Shortbread Cookies. They are light and crisp, with just the right amount of sweetness.

I cut these into small squares, but you can easily do bars or another shape (you may just need to change the cooking time). I used brightly colored sprinkled to give them a holiday feel, but if you make these year-round feel free to use any color/theme of sprinkles you’d like.

After mixing the dough, I simply pressed the dough into an 8×8 glass pan (and then added even more sprinkles on top!)

I stuck the pan in the freezer for a bit, and then pulled it out and used a sharp knife to make my squares. Super simple.

One note: you’ll want to watch these carefully as they cook, and pull out as soon as they start turning a light golden brown. 

Yours make take a little longer or a little less time to bake, depending on the size of your squares.

An easy Christmas Shortbread Bites recipe that everyone will love!

Prep Time 30 minutes
Cook Time 10 minutes
Total Time 40 minutes

Ingredients

  • Two Sticks Softened Butter
  • 1/2 Cup Powdered Sugar
  • 1 Teaspoon Vanilla Extract
  • 1/4 Cup Cornstarch
  • 1 3/4 Cup All Purpose Flour
  • 1/4 Cup Sprinkles

Instructions

    Line a baking sheet with parchment paper. Set aside.

Place softened butter and sugar into a mixing bowl. Using a wooden spoon, mix together until smooth.

Add in vanilla. Continue stirring until well incorporated.

Add in your cornstarch and flour, stirring together until your dough forms.

Add in half your sprinkles, mixing until combined.

Turn dough out onto a well-floured surface and knead several times.

Press dough firmly and evenly into an 8x8 baking dish covered with parchment paper.

Sprinkle remaining sprinkles over top and press into dough.

Chill dough in refrigerator for approximately 30 minutes (or use the freezer and chill for approximately 15 minutes).

Preheat oven to 350 degrees.

Lift dough from pan and cut into squares approximately 1" wide.

Scatter squares onto baking sheet.

Bake for 9-13 minutes.
