Potato Recipe {Make Guacamole Potato Bites}

Ready or not, cooler weather is fast approaching, and that means it’s time to start thinking about recipes for game day! These Guacamole Potato Bites are guaranteed to be a game day favorite. All you need is a quick trip to Walmart, a few ingredients, and about 45 minutes!

If there’s one rule for game day recipes, it’s this: recipes MUST be flavorful and delicious. When I want to “Ban the Bland” and take our recipes up a notch, I turn to Pace® Salsa. Prepare your potatoes and bake…

Then top your potatoes with your choice of toppings.

Guacamole Potato Bites

Pace® Salsa Verde
3 Russet Potatoes
2 Tablespoons Butter, Melted
Salt, To Taste
2 Cups Shredded Cheddar Cheese
2 Avocados, Mashed
1 Tablespoon Jalapeno Peppers, Diced
1 Tomato, Diced
1/4 Cup Cilantro, Chopped
1/4 Cup Green Onion, Diced
1/8 Cup Sour Cream

Preheat oven to 400 degrees. Wash and dry your potatoes, and cut into rounds approximately 1/2 inch thick.
Brush both sides of potato rounds with melted butter and sprinkle with salt. Bake in oven for approximately 25 minutes, until fork tender. Flip halfway through cooking to evenly brown both sides.
Meanwhile, combine mashed avocados with jalapeno peppers. Set aside.
Remove potatoes from oven, top with cheese, and place back in oven to melt the cheese.
Remove from oven and top with your avocado mixture, tomato, cilantro, green onion, sour cream and Pace® Salsa Verde.
Enjoy warm.

These turned out AMAZING. I love the combination of potato, avocado and sour cream, as well as the genuine southwest flavor the Pace® Salsa Verde brings to the mix.
