Homemade Tomato Soup Recipe

My family loves homemade tomato soup in the winter (well, in any season, really). And I love it because it’s fresh, healthy, and comes together quickly. You can get this on the table in under 30 minutes!

  • 1 small onion, chopped
  • 3 garlic cloves, chopped
  • 2 tablespoons extra virgin olive oil
  • 2 28 ounce cans plum tomatoes
  • 1 can diced tomatoes with jalapenos
  • 2 cups chicken stock
  • salt and pepper to taste
  • lime juice to taste
  • cilantro, chopped
  • shredded parmesan cheese

Heat up olive oil and saute onion until soft. Add in garlic, and stir for several minutes.

Add in tomatoes and chicken broth. Bring to boil, then lower heat to simmer. Using an immersion blender, blend until smooth.

Add in salt and pepper and lime juice to taste. Top with cilantro and shredded parmesan.

Make this soup and serve it with garlic bread, crackers, or cheese toast. I’m sharing my favorite basic recipe, but it’s so easy to customize according to your family’s preferences.

Dislike spicy foods? Just sub in regular diced tomatoes for the jalapeno diced tomatoes. Want to make it creamer and richer?

Sub in heavy cream or half and half for the chicken stock. It’s hard to go wrong with this recipe!

As you can see, we like ours with a bit of lime and cilantro. We’ve also made it using diced tomatoes with garlic and oregano, and topped with chopped parsley. The possibilities are endless!
