GUYS. I have ALL THE WORDS to say about these amazing sugar cookie bars. They are soft, chewy, colorful and delicious.

I used a sprinkle set I picked up from Target, but you can switch out your sprinkles based whatever holiday or occasion you’re making these for.

Full step by step recipe is below!

Here is the dough, ready for the sheet pan. Adding sprinkles to the dough is completely optional, but just adds a little more color to your finished treat.

To easily transfer the dough to your sheet pan, place spoonfuls of the dough around your pan. Then, use a sheet of parchment paper to smooth out the dough. Just press on your parchment until your dough is smooth and even. SO easy and mess free.

Ingredients

For the Sugar Cookie Bars

  • Two Sticks Unsalted Butter, Softened
  • 4 Ounces Cream Cheese, Room Temperature
  • Two Cups White Sugar
  • 4 Eggs, Room Temperature
  • 1 Tablespoon Vanilla Extract
  • 5 Cups All Purpose Flour
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Baking Soda

For the Cream Cheese Frosting

  • 1 Stick Unsalted Butter, Softened
  • 4 Ounces Cream Cheese, Room Temperature
  • 1 Tablespoon Vanilla Extract
  • 4 Cups Powdered Sugar
  • 3 Tablespoons Heavy Whipping Cream
  • 1 Cup Sprinkles

Instructions

To Make the Sugar Cookie Bars

Take a sheet pan (mine was 13x18), and spray with nonstick cooking spray. You can alternatively use parchment paper, if desired.

Preheat oven to 350 degrees.

In the bowl of a stand mixer, beat together butter and cream cheese. Mix in the sugar until light and fluffy.

Add in the eggs, one at a time, and the vanilla extract.

In separate bowl, combine flour, baking soda and salt.

Add your flour mixture to your mixer, one cup at a time, until fully incorporated (don't overmix). If desired, add 1/8-1/4 cup of your sprinkles to dough.

Spread dough onto your cookie sheet and bake for 13-15 minutes.

Let cool completely while you make your frosting.

To Make Your Cream Cheese Frosting

In the bowl of a stand mixer, mix together butter and cream cheese. Add in vanilla extract.

Mix in powdered sugar, a little at a time, until combined. Add in your whipping cream (start with 2 tablespoons and add in more if needed).

Place dollops over cooled sugar cookie bars and spread. Add sprinkles if desired.

Notes

Keep an eye on these in the oven. You definitely don't want them to burn. Start peeking at them at the 12-13 minute mark.

Like I said, these turned out so good. My daughter has requested a batch for her birthday and I am more than happy to oblige.

I store mine in the fridge; it helps the icing set up a bit and gives the bars a nice, chewy texture.
