As a blogger, one of my favorite things to do is to take childhood favorites and update them in creative ways. Like many people I know, we grew up on all the tasty varieties of Keebler Cookies, and I wanted a fun and easy way to introduce them to my children.
Our family LOVES s’mores. We roast the marshmallows over our fire pit and love experimenting with different chocolate/cookie combinations. Unfortunately, while it’s a lot of fun, it’s also a lot of work, especially as it can take a while to get a good fire going (and let’s not even talk about the inconvenience rain and bugs can add to the mix).
So when I discovered Keebler Simply Made Cookie Thins, I knew I wanted to create an easy microwave s’mores recipe that we can enjoy anytime. They’re perfect for any occasion…or no occasion at all. They come together in just a few minutes, and the kids love to help assemble them.
Being a longtime fan of Keebler Cookies, I loved seeing all the new varieties available. Taking a trip down the cookie aisle was like taking a trip down memory lane, and I love that I now get to introduce these old favorites to my kids in fun new ways.
I mentioned how we love to get creative with our s’mores…so in addition to our Keebler Cookies, we used marshmallows and a variety of chocolate to customize our treats.
We laid the cookies out, topped half the cookies with half a marshmallow, and the other half with chocolate.
Just place on a microwave-safe plate and heat in the microwave for 20 seconds. You may need a little longer if you’re heating more than one at once. You want to microwave just to the point that the chocolate gets soft. Invert one marshmallow half on top of one chocolate half, and you’re done!
These tasted amazing, and I love that we can make them for a quick weeknight treat.
I conveniently found Keebler cookies in the snack aisle at Kroger (where I do most of my weekly shopping anyway)…
