S’MORES COOKIES {A RECIPE}

You can never have enough cookie recipes! These S’mores Cookies are easy and delicious! Featuring graham crackers, mini marshmallows and chocolate chips, you’ll want to make a double batch!

SMORES COOKIES RECIPE

If you love s’mores, you’re in the right place. I made a batch of these S’mores Cookies the other weekend, and they didn’t last 24 hours. Filled with tiny marshmallow bits, chocolate chips and graham cracker crumbs, they taste just like the real thing!

Full printable recipe and shopping list are below! Here’s what you’ll need:

  • 1 stick of butter, softened
  • 1/4 cup white sugar
  • 1/2 cup dark brown sugar
  • 1 egg
  • 1 tablespoon vanilla extract
  • 1 cup graham cracker crumbs (approximately 7 sheets)
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup mallow bits
  • 1 cup chocolate chips

Preheat over to 350 degrees.

Crush your graham crackers into crumbs using either a food processor or ziploc bag (make sure it’s sealed tightly)! Set aside.

Cream your butter, white sugar and brown sugar in a bowl, for several minutes. Add in your egg and vanilla. Beat for 2 minutes.

Whisk together your graham cracker crumbs, flour, baking powder, and salt.

In batches, add your dry ingredients to your wet. Mix until just combined.

Stir in your mallow bits and chocolate chips.

Place rounded scoops on a parchment lined cookie sheet. Bake approximately 11-12 minutes.

I used a food processor to turn my graham crackers into crumbs, but you can also put them in a gallon-sized ziploc bag and gently mash them with a rolling pin (kids LOVE helping with this)!
