Homemade Cupcakes {vanilla berry cupcakes}

Daunted by the thought of making homemade cupcakes? It actually couldn’t be easier! Today, we’re sharing how to make one of my favorite homemade cupcakes recipes–vanilla berry cupcakes!

Spring is finally here and I’m so happy for the berry season! There’s nothing like enjoying fresh baked treats full of berry flavor and topped with even more berry deliciousness. These Vanilla Berry Cupcakes are a staple around my home around these days.

First, they are super simple to make. Second, they are incredibly delicious and taste super bright. Third, they are so full of berries it’s almost a dream. If you are like me then the Vanilla Berry Cupcakes are going to become your go-to recipe during the whole Spring and Summer.

My favorite part is the strawberry frosting. Seriously if you love strawberries then this frosting is for you. It’s creamy and light and airy. My secret? Using berry puree instead of fresh strawberries. Fresh strawberries will water down your frosting and will make you need more confectioners sugar. But, if you use strawberry puree instead, you’ll need less powdered sugar and the berry flavor will really shine.

Since I was looking to really pack the Vanilla Berry Cupcakes with flavor I stuffed them with some fresh berries before baking and I can’t recommend it enough! Actually, it’s so good you can even make the cupcakes without the frosting for a lighter, easier, everyday kind of treat.
Ingredients: 
For the cupcakes
1½ Cup flour
¾ Cup sugar
1 Tsp baking powder
½ Cup butter
2 Eggs
½ Cup water
1 Tsp vanilla
12 strawberries
For the frosting
1/2 Cup strawberry puree
1/2 Cup butter
3 Cups powdered sugar.
 
Directions: 
Preheat the oven to 350 degrees. Line a cupcake tray with 12 cupcake liners.
In a bowl mix the butter and sugar. Add the vanilla and continue mixing until light and fluffy (around 2 minutes)
Add the eggs and continue mixing.
In 2 additions mix in the flour, baking powder and water and mix until everything is well incorporated and there are no lumps left.
Divide the batter between the 12 cupcake liners and place 1 berry in the middle of each unbaked cupcake.
Take to the oven and bake for 15/20 minutes or until done.
Remove from the oven and let them cool.
Meanwhile, whip up the frosting mixing the butter, powdered sugar and strawberry puree until fluffy. Place in a piping bag.

Once the cupcakes are no longer hot to the touch decorate them with the frosting. Serve and enjoy.
