S’MORES MUFFINS {AN EASY RECIPE}

This recipe for S’mores Muffins will become a new family favorite! We took a basic s’mores recipe and turned it into a muffin-perfect for snacks or an easy breakfast. If you love s’mores, this post is for you!

The other day, I made an amazing batch of s’mores cookies that didn’t last 24 hours. We loved them so much, I wanted to see if I could turn them into a muffin!

These S’mores Muffins are chocolate-y, delicious, and the perfect breakfast or snack treat.

I made normal, cupcake-sized muffins. You can make these larger (for that bakery-style feel) or use mini muffin tins. You’ll just need to adjust the cooking time accordingly (mini muffins would, naturally, take less time to bake).

Prep Time 20 minutes
Cook Time 16 minutes

Ingredients

  • 4 Tablespoons Melted Butter
  • 1/4 Cup Vegetable Oil
  • 1 Large Egg
  • 1 Egg White
  • 3/4 Cup White Sugar
  • 1/4 Cup Brown Sugar
  • 1 Tablespoon Vanilla Extract
  • 1/2 Cup Buttermilk
  • 1 1/2 Cup White Flour
  • 1/2 Cup Crushed Graham Cracker Crumbs (About 4 Sheets)
  • 2 Teaspoons Baking Powder
  • 2 Teaspoons Corn Starch
  • 1/2 Teaspoon Salt
  • 1/2 Cup Chocolate Chips
  • 1/2 Cup Mini Baking Marshmallows

Instructions

Combine butter and oil in a bowl. Stir in white and brown sugar.

Mix in egg, egg white, and vanilla extract.  Stir well, until thoroughly combined. Add buttermilk and stir well.

Whisk together flour, graham cracker crumbs, baking powder, corn starch, and salt.

Fold flour mixture into wet ingredients. Gently fold in chocolate chips and marshmallow bits. Do not overmix!

Cover bowl with a towel and let sit for 15-30 minutes.

Preheat oven to 425 and prepare muffin pan (I use paper liners).

Bake for 8 minutes and then reduce the oven temperature to 350 and bake for an additional 8 minutes.

Serve warm.

These turned out AMAZING!

In case you were curious, the cornstarch helps make the muffins more tender and fluffy. Using buttermilk, in place of regular milk, helps make the muffins moist.

I sprinkled a few extra chocolate chips and marshmallows on top of the muffins, right before baking, just for good measure.
